Because Weight Watchers is awesome and because I am one lucky mama, the kind folks at the WW office sent me over one of their newest books, called Eat! Move! Play! I've spent the past few weeks reading through the book (I'm a slow reader and only find five minutes at a time to absorb any printed word), and have found it to be chock full of great tips for motivating your kiddos to stay active and eat healthy, as well as for how to encourage an active lifestyle for the whole family.
It's a really good read. For some people who are particularly health and fitness-conscious, much of the information may be elementary. But it's still a really good primer and refresher.
In the back of the book, there are a TON of "kid-friendly" recipes to try, and nutrition information, including Points values, and included with each one. As for our family, I found several of the recipes to be ones I probably would never make. Sean isn't a particular adventurous eater and I doubt I'll be whipping up some fancy international cuisine just for me and the kiddo. And some of the recipes were pretty ingredient-heavy.
I did find several that I really liked. One that I whipped up over the weekend was for Spinach Snack Bites. AND I have permission from the fine folks at Weight Watchers to reprint it here.
Spinach Snack Bites Serves 24 | Prep 10 minutes | Bake 45 minutes
2 (10-ounce) packages frozen spinach, thawed and squeezed dry 8 ounces feta cheese, crumbled 1 cup shredded reduced-fat sharp cheddar cheese 4 large eggs 2 large egg whites
1. Preheat oven to 350 degrees. Spray a 9 x 13-inch baking dish with non-stick spray. 2. Stir all ingredients together in a large bowl. Pour into the basking dish.
Per serving (1 square): 59 calories, 4g fat, 2g saturated fat, 0g trans fat, 47mg cholesterol, 178mg sodium, 2g carbs, 1g fiber, 5g protein, 110mg calcium
These are super yummy. I just ate two for dinner. Don't tell the iToddler.
